Dijon mustard<br \/>\r\n1\/2 tsp. salt<br \/>\r\nGround pepper to taste<br \/>\r\n1\/2 cup freshly grated Parmesan<br \/>\r\ncheese<\/p>\r\n<p>1. Place celeriac and parsnips in a large saucepan; cover with lightly salted<br \/>\r\nwater. Place potato in a medium saucepan; cover with lightly salted water.<br \/>\r\nBring both saucepans to a boil over medium-high heat. Reduce heat to<br \/>\r\nlow, cover, and simmer gently until the vegetables are very tender, about<br \/>\r\n20 minutes for the potato and 30 to 40 minutes for celeriac and parsnips.<br \/>\r\n2. Drain the potato and mash in a large bowl with a potato masher. Cover<br \/>\r\nand keep warm. Drain the celeriac and parsnips and transfer to a food processor;<br \/>\r\nprocess until smooth. Add the puree to the potato.<br \/>\r\n3. Meanwhile, combine broth and oil in a saucepan (or measuring cup)<br \/>\r\nand heat on the stovetop (or in the microwave) until steaming. Stir into<br \/>\r\nthe puree, along with 2 Tbsp. chives, yogurt, mustard, salt and pepper. Stir<br \/>\r\nin Parmesan. Garnish with the remaining 1 Tbsp. chives.
