Bred in the late 80’s by Ted Superak of Harris Seeds in Rochester, NY, Carnival is an F1 hybrid cross of the traditional Sweet Dumpling and Acorn squash varieties.  The result is a colorful fruit, with a sweeter flavor and smoother texture than many winter squashes.

As is common with squash in the Curcubita Pepo family, Carnival carries solid nutritional credentials, being a good source of potassium, vitamin A and dietary fiber.  Cook it as you would any other winter squash for a awesome addition to your fall and winter culinary repertoire!
